Traditional Greek Fava (Yellow Split Pea Dip)

Ingredients
- 1 liter boiling water
- 200 g yellow split peas
- 1 red onion
- 2 spring onions
- 7 tablespoons olive oil
- Sweet paprika
- salt
- 2 bay leaves
- Fresh oregano
- juice from 1 lemon
Method

Place the split peas in a bowl, pour boiling water over them and stir well until the water changes color.

Drain and transfer to another bowl and set aside.

Chop the onion into 4 thick slices and place them in the pot.

Add 2 tablespoons of olive oil, salt, pepper and bay leaves.

Place pot over high heat and stir the vegetables for 2-3 minutes until soft.

Add the split peas and stir.

Simmer for 20 minutes stirring all the time, until the water evaporates.

Remove from heat and take out the bay leaves.

Transfer the contents to a food processor.

Add the lemon juice and 5 tablespoons of olive oil.

Beat until the mixture is smooth.

Serve with roasted spring onions, drizzle with some extra virgin olive oil, sprinkle with some fresh oregano, sweet paprika.
