Olive Bread

Ingredients
  • 1 cup of extra virgin olive oil
  • 500 g all-purpose flour
  • 8 g active dry yeast
  • 1 glass of water
  • 100 g Kalamon olives
  • 80 g feta cheese
  • 1 teaspoon sugar
  • salt
Method

In a large bowl mix the flour, yeast, salt, sugar, water and half of the olive oil.

Stir until all of the ingredients are completely combined and you create a nice dough.

Transfer dough to a bowl dusted with flour.

Cover with plastic wrap and allow the dough to rise.

When ready, after 10 minutes approx. dust with flour and roll out dough.

Add the rest of the olive oil, the grated feta and the finely chopped olives.

Transfer to a baking pan lined with parchment paper.

Preheat oven to 170◦C (338◦F) Fan.

Cover baking pan with kitchen towel and allow the loaf to rise.

Drizzle with olive oil and bake for 30-40 minutes.

Serving suggestion:

You can enjoy olive bread as a snack, or to accompany your salads or legumes.

TIP

You can use more than one type of olives, add oregano or chili peppers.
